At 2.4 gallons (9 liters), the Maze bin is our largest kitchen compost bin. It's perfect for a family or a kitchen that produces lots of peels and food scraps. As a general rule, 0.8–1.1 gallons (3–4 L) is enough for 1 or 2 people, while 1.6–2.4 gallons (6–9 L) works well for a family.

Its wide opening lets you scrape the contents of a plate or cutting board straight in. Empty it 2 to 3 times a week into your composter or worm composter.

The two are meant to be used together: the trash can collects the day's scraps, which you then empty into the bokashi bucket once a day.

Allow a few days, and empty it at least once a week, even if the Maze trash can's 2.4 gallons (9 liters) aren't full. This short wait gets the peels breaking down and does some of the prep work for your worms, which have no teeth and wait for food scraps to soften before eating them.

Just make sure no scraps that are off-limits to worms have slipped in before you empty it into the worm composter.
